Description
The shotoh, meaning “small sword” in Japanese, is a versatile knife slightly larger than a paring knife. It excels at intricate tasks such as peeling, trimming, and creating garnishes, as well as preparing meat and fish.
Handcrafted in Seki, Japan, the MIYABI Birchwood collection is a true work of culinary art. The blade features a core of SG2 micro-carbide powder steel, protected by a stunning 101-layer flower Damascus pattern. The CRYODUR® ice-hardening process ensures exceptional durability and long-lasting sharpness.
The scalpel-like blade is paired with an elegant Karelian (Masur) Birch handle, a rare and prized material known for its beauty and durability. Ergonomically designed, the handle provides a comfortable and secure grip, making this knife as functional as it is striking.
