Ice-hardened using the CRYODUR® process and hand-honed with the traditional 3-step Honbazuke method, the authentic thin Japanese blade achieves a razor-sharp 9.5°–12° edge with exceptional durability and corrosion resistance. The D-shaped handle, made from beautifully burled North American Bigleaf maple, offers ergonomic comfort and balance, with natural variations that make each knife uniquely one of a kind.
